〜を除き (~o nozoki) — except for ~

When to use it
- Look at the opening hours posted at a city-office counter: 「土日祝日を除き、午前8時半から午後5時まで」— 'except Saturdays, Sundays and public holidays, 8:30 a.m. to 5 p.m.'
- And in the evening NHK weather: 「沖縄を除き、全国的に…」.
Meaning
「除く」= to remove, so 「〜を除き」says 'taking this out as the exception, for all the rest…'.
How to attach
- Attach 「を除き」after a noun, put a 、 and carry on with the sentence about the rest.
- In speech or softer writing you get 「を除いて」, and before a noun 「を除く N」(土日を除く平日).
Versus what you know
- In speech, the 「〜以外」you already know (日曜日以外) does this job; 「を除き」is the form of written notices, the news and rules.
- Don't confuse it with the earlier 「〜をおいて(ほかに)〜ない」— that is praise: 'no one but him is fit for it'; 「を除き」has no praise at all, it just marks an exception.
Watch out
The key rule: the thing taken out must belong to the group the rest of the sentence talks about, and when chatting with a friend 「以外」or 「を除いて」is the natural choice.

How it is built (कसरी बन्यो) 年末年始 = the year-end and New Year holidays (N) → 「を除き、」= except for that → 毎日…営業しております = we're open every day (a shop's polite notice).

おきなわをのぞき、ぜんこくてきにきびしいひえこみとなるみこみです。
Except for Okinawa, it is expected to be bitterly cold across the country.
How it is built (कसरी बन्यो) 沖縄 = Okinawa (N) → 「を除き、」= except → 全国的に = across the country → 厳しい冷え込みとなる見込みです = expected to be bitterly cold (weather news).
研修期間の3か月を除き、時給は1,200円とします。
けんしゅうきかんのさんかげつをのぞき、じきゅうは1,200えんとします。
Except for the three-month training period, the hourly wage is 1,200 yen.
How it is built (कसरी बन्यो) 研修期間の3か月 = the 3 months of training (N) → 「を除き、」= except for that → 時給は1,200円とします = 1,200 yen per hour (job-ad language).
